Roast Lime Chicken

Preheat oven to 375°
One 4 to 4 ½ pound chicken
1 Lime
Salt and freshly ground pepper
Rinse chicken and place it in the bottom of a covered roaster.
Cut the lime in half and squeeze the lime juice from both halves
over the chicken.
Place one half of the lime in the body cavity of the chicken.
Sprinkle chicken with salt and pepper.
Put cover on roaster and place in preheated (375°) oven.
Bake for about 1½ to 2 hours depending on the size of the chicken
or 18-20 minutes per pound.
After an hour of baking, remove cover and baste every ten minutes.
Chicken will brown on top. Place chicken on platter and remove
lime half.
Serve with steamed rice, a green vegetable and salad.
For dessert: Cherry pie.
