Ribbon Candy

INGREDIENTS
3 cups sugar
1 cup light corn syrup
1/4 cup water
1/2 teaspoon flavoring extract
food coloring paste
Combine sugar, water, and corn syrup in saucepan, bring to boil, stir for 20
minutes until temperature reaches 280º.
Remove from heat, stir in flavoring.
Divide candy in half, pour each half onto marble slab or buttered cookie
sheets, add coloring paste to one half.
As syrup cools, lift edges and continually fold into center with spatula.
When candy stops sticking to spatula and is cool enough to touch, repeatedly
pull and fold candy into ropes (about 5 minutes).
Arrange ropes in alternating colors and press into log-shaped loaf.
Press and pinch end of log and pull into thin, long one-inch wide ribbon.
Cut strip off ribbon and, while walking index and middle finger on slab,
immediately start twisting ribbon around fingers.
Repeat for each ribbon strip.
Let cool.
Eat.
