Yummy Fresh Tomatoes and Pasta

Quick & delicious
INGREDIENTS
1 tsp. olive oil
Few tablespoons of favorite vegetables (mushrooms,
garlic, onions, etc….
4 quartered compari tomatoes
1 large fresh grown tomato
Some slightly-past-prime garden tomatoes
Dash of sea salt
Freshly cooked pasta
Shaved Parmigiano-Reggiano
PREPARATION
In a microwave safe bowl, put a teaspoon of olive oil. Add a few
tablespoons of your favorite veggies…mushrooms, onions, garlic,
etc. Microwave about a minute. Add about four quartered Campari
tomatoes, or 1 large fresh grown tomato, or some slightly-pastprime
garden tomatoes, a dash of sea salt, and microwave for
another 1 – 1 ½ minutes. Adjust to personal preference.
Toss with freshly cooked pasta and shave some Parmigiano-Reggiano
over it.
Yum. Yum. Yum. Also good served on thick slices of home-baked
bread that have been grilled with good olive oil. This is not sauce. It
is fresh warm veggies with pasta.
