Plum Buckle

This is one of my favorite summertime desserts and the purple
plums are picked from a tree in my yard.
INGREDIENTS
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
2 sticks (1/2 pound) butter at room temperature
1 cup plus 1 tablespoon sugar
2 large eggs
6 to 8 medium plums sliced
½ teaspoon ground cinnamon
Preheat the oven to 350 degrees F. Coat a 9-inch round baking pan
with vegetable oil spray and line the bottom with parchment paper.
Spray the parchment paper as well.
In a small bowl, whisk together the flour, baking powder and salt
and set aside. Beat the butter and 1 cup of sugar together using an
electric mixer at medium speed until the ingredients are fluffy. Add
the eggs one at a time and beat well. Finally, add the flour mixture
and mix until evenly incorporated.
Scrape the batter into the prepared pan and spread to a smooth
surface. Keeping them close together, push the plum slices into
the batter. In another small bowl, combine the cinnamon and 1
tablespoon of sugar and sprinkle over the entire surface.
Bake on the center rack of the oven until the top is golden and a
cake tester comes out clean. Baking time is usually 55 minutes.
Let the plum buckle cool and enjoy this delicious dessert. It is also
great served warm with ice cream.
