Fried Morning Glory-Thai Pak Boong Fai Deng

INGREDIENTS
Large bundle water spinach (available in Southeast Asian markets)
10 cloves garlic
3 red Thai chilies
1 Tablespoon fish sauce or soy sauce
1 Tablespoon oyster sauce
1 Teaspoon light brown sugar
3 Tablespoons cooking oil
PREPARATION
Wash the water spinach, drain, and chop into 5 inch pieces
Chop the garlic and peppers. Mix the garlic, peppers, fish sauce
and oyster (or soy) sauce in a bowl
COOK
Heat the oil in a heavy pan or wok until smoking hot
Add the water spinach and stir fry for one minute, turning often
Add the other ingredients and stir fry for two minutes, turning often
Serve immediately
