Pete’s Carrot Cake
Preheat oven to 350 degrees
Flour and grease a tube pan
2 1/4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons double-acting baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 1/3 cups vegetable oil
2 cups sugar
4 beaten eggs
Stir flour mixture slowly into egg mixture. Blend in 3 cups grated carrots.
Pour into greased tube pan. Bake at 350 degrees for 50-60 minutes.
(knife poked into cake comes out clear). Cool and slice into 3 layers
CREAM CHEESE ICING
Blend 4 oz. softened butter, 8 oz. cream cheese, 1 teaspoon vanilla extract,
one pound confectionery sugar. Ice between layers and top layer.
Decorate with whole or chopped walnuts (optional).
Serve on your favorite old cake plate and china!
