INGREDIENTS FOR THE CAKE
4 eggs, separated
5/8 cup of sugar (125 gr)
1 cup of flour (100gr)
3 tablespoons of melted butter (50gr)
pinch of salt
FOR THE CREAM
14 oz. of mascarpone (400gr)
4 egg yolks
5/8 cup of sugar (120gr)
1/2 cup of Amaretto (10cl)
2/3 cup of strong coffee (15cl)
Beat egg yolks with sugar until creamy white.
Beat egg whites with salt until they hold stiff peaks. Add to egg yolk
mixture, alternating with butter and flour.
Spread evenly in flat baking pan and bake at 350º F for 10 minutes.
Let cool completely.
Beat egg yolks and sugar until creamy white. Add mascarpone and
half the Amaretto. Combine coffee and remaining Amaretto. Cut
cake in half. Place first half in square dish and soak with half the coffee
mixture. Add half the cream. Place the second half of the cake
on top and soak with the remaining of the coffee mixture. Top with
remaining cream. Put in the refrigerator. Sprinkle with powdered
chocolate before serving.
